Famous Muar Fish Otah (Otak)
- Figo Lotus Bun
- Cooking Oil
- Cucumber
- 1 Egg
- Salt
- Sambal Sauce
Instructions
- Steam the lotus bun for 4 minutes.
- Air fry the otah at 180°C for about 10 minutes. Let it cool off slightly before cutting it into portions, based on how many buns you have.
- Crack 1 egg, add some salt and mix well.
- In a frying pan, heat up some cooking oil over medium heat and fry the egg.
- Chop the cucumber into smaller pieces, leaving the skin on or off depending on your preference.
- To assemble, take a lotus bun and brush some sambal sauce over it. Then place a piece of otah, followed by the egg and cucumber. Close the bun and serve.
Tips for Otah & Egg Sambal Bun
Steam the lotus buns just before serving to keep them soft, fluffy and warm. Avoid over-steaming as this can make the buns too wet or sticky.
Avoid overcooking the otah as it can become dry and firm. Check it towards the end of the cooking time, as air fryer temperatures may vary.
Portion the otah evenly so each bun has a balanced amount of otah and egg.
Season the egg lightly since the otah and sambal are already savoury and flavourful.
