
Spicy Pork Belly Lotus Bun is a flavourful combination of tender pork belly tossed in a rich, spicy chilli mixture with black garlic oil, dried chilli, chilli flakes, spring onion and shallots. Served in soft, fluffy lotus buns, each bite is savoury, aromatic and packed with a satisfying spicy kick.

- 1.5 tablespoons Ebara Age Ninniku Abura Black Garlic Oil Seasoning
- 2 tablespoons Dried Chilli Crushed (SunnyFarm) or Chilli Flakes

Figo Lotus Bun
- 1/2 cup Dried Chilli
- 1 cup Steak Sauce or Soy Sauce
- 3 chopped Spring Onion

3 chopped Shallot
- 3/4 teaspoon Salt
- 1/4 teaspoon Sugar
Instructions
- Chop the spring onion and shallots into small pieces and set aside.
- Heat oil in a frying pan over medium heat. Add the pork belly cubes and cook briefly, then add 1 cup of steak sauce. Mix well and cook until the pork belly is fully cooked. Remove from the pan and set aside.
- In the same pan, add 1.5 tablespoons of black garlic oil, 2 tablespoons of dried chilli and 1/2 cup of chilli flakes. Stir well to combine.
- Add the cooked pork belly back into the pan and mix well with the chilli mixture.
- Season with 3/4 teaspoon of salt and 1/4 teaspoon of sugar. Stir well to combine.
- Add the chopped spring onion and shallots. Mix well and cook for a little longer until fragrant, then set aside.
- Steam the lotus bun for 4 minutes.
- To assemble, place a suitable amount of spicy pork belly inside each lotus bun, making sure there is enough filling without overstuffing so the bun can still close comfortably.

Cook the pork belly thoroughly in the steak sauce before removing it from the pan.
Use medium heat when frying the black garlic oil, dried chilli and chilli flakes to prevent them from burning.
Adjust the amount of dried chilli and chilli flakes according to your preferred level of spiciness.
Steam the lotus buns just before serving to keep them soft and fluffy.
