Ingredients

  1. Oriental Delight Black Pepper Marinated Beef Ribeye

  2. McCain Tater Tots

  3. Yorokobi Sea Scallop

  4. Emborg Unsalted Butter

  5. Steak Sauce or your preferred sauce

  6. Salt

  7. Pepper

Instructions

  1. Air fry the tater tots at 180°C for about 15 minutes. Season with salt halfway through cooking. Remove and set aside.
  2. Season the black pepper-marinated beef ribeye with salt.
  3. In a frying pan, heat the unsalted butter over high heat. Place the beef ribeye in the pan and cook for about 3 minutes without moving. Tilt the pan and continuously baste the beef with the melted butter. Flip the ribeye and repeat on the other side. Transfer to a chopping board and let it rest undisturbed for about 10 minutes.
  4. In the same pan, add the scallops and cook for 1–2 minutes on each side. Season both sides with salt and pepper. Remove and set aside.
  5. On the chopping board, slice the rested beef ribeye into pieces.
  6. To assemble, arrange the sliced beef ribeye on a serving plate, followed by the scallops and tater tots. Drizzle steak sauce, or your preferred sauce, over the beef ribeye and serve immediately.

Tips for Surf & Turf

Preheat the pan well before adding the ribeye. A hot pan helps create a beautifully browned crust while keeping the inside juicy.

Baste with butter continuously for extra richness and a deeper, more aromatic flavour.

Pat the scallops dry before cooking for better browning and a nicely caramelised surface.

Season the scallops lightly, as the marinated ribeye and steak sauce already provide plenty of flavour.

What to Serve with Surf & Turf

Surf & Turf is already a rich and satisfying meal, so it pairs well with lighter sides that add freshness and balance. Serve it with a fresh green salad, roasted vegetables, sautéed mushrooms, garlic butter vegetables, or steamed broccoli for a simple contrast to the buttery beef and scallops. For extra comfort, you can also pair it with creamy mashed potatoes, buttered corn, or a light coleslaw. A refreshing drink such as lemon water, iced tea, or sparkling water can also help cut through the richness of the dish.

FAQ

1. Can I use a different cut of beef for Surf & Turf?

Yes. You can substitute the ribeye with sirloin, striploin, tenderloin, or another steak cut you prefer. Adjust the cooking time according to the thickness of the steak and your preferred doneness.

2. What sauce goes well with Surf & Turf?

Steak sauce works well, but you can also serve the dish with peppercorn sauce, mushroom sauce, garlic butter, or chimichurri for a different flavour.

3. How do I get a good sear on the scallops?

Make sure the scallops are thoroughly dried and the pan is hot before adding them. Avoid moving them around while they cook so they have enough time to develop a golden-brown crust.

4. What can I use instead of unsalted butter?

You can use salted butter, but reduce or adjust the amount of additional salt used to prevent the dish from becoming too salty.
