Instructions
- Melt 25g of unsalted butter and set aside.
- In a mixing bowl, whisk together 3 eggs, 100ml culinary cooking cream, the melted butter, ½ teaspoon salt and black pepper to taste. Set the egg mixture aside.
- Cut the sausages, karaage chicken and Brussels sprouts into bite-sized pieces. Shred 3 slices of cheese.
- In a separate bowl, lightly mash the tater tots with a fork. Add a splash of culinary cooking cream if desired for a creamier texture, then mix well.
- Assemble the casserole by adding the sausages to an oven-safe or air fryer-safe serving dish, followed by the mashed tater tots, Brussels sprouts and karaage chicken. Pour the egg mixture evenly over the ingredients, then top with the shredded cheese.
- Preheat the air fryer to 180°C for 5 minutes. Place the casserole into the air fryer and cook at 180°C for 5 minutes, or until the egg has set and the cheese has melted. Cook in batches if necessary, depending on the size of your air fryer.
- While the casserole is cooking, prepare the mentaiko mayo by mixing 2 parts mentaiko tube with 1 part Kewpie mayonnaise until smooth and creamy.
- Once the casserole is done, drizzle the mentaiko mayo generously over the top and lightly torch the sauce until slightly caramelised. Serve immediately while warm.
Tips for Tater Tots Casserole
Lightly mash the tater tots. Mashing them helps create a soft, creamy base that holds the casserole together while absorbing the rich egg and cream mixture.
Cut the ingredients evenly. Dice the sausage, karaage chicken and Brussels sprouts into similar-sized pieces to ensure they cook evenly and distribute well throughout the casserole.
Check for doneness. The casserole is ready when the egg is set in the centre and no longer looks runny. Add an extra 1–3 minutes if needed, depending on your air fryer.
Serve immediately. This casserole is best enjoyed fresh while the cheese is warm and melty, and the mentaiko mayo is creamy.
